Buche de Puerco is basically fried pig stomachs that are cleaned very well before they are cooked to perfection. Buche de Puerco is basically a food that a lot of people in Mexico eat, and to this very day you can buy Buche de Puerco by the pound all over Mexico. There is one place that I been to in Dolores Hidalgo Guanajuato, Mexico called Restaurante Vicente Fernandez and they sell Buche de Puerco by the pound. I love this kind of food, because it's very tasty and full of fried flavor but the downside of this food is that it's full of grease and calories. In Mexico it's one of the most expensive foods to buy it's like five dollars a pound. Buche de Puerco are eaten as tacos with Mexican homemade hot sauce, and Buche de Puerco tacos are eaten for lunch a lot in Mexico. I would suggest my fans out there to try Buche de Puerco at least once, but if your stomach is weak, "please do not try this dish."
The ingredients in making Buche de Puerco are very simple, and it' made outside in a copper open pot and the smell is very good. The copper pot is usually preheated then fresh pig lard is added and it's melted down with the heat of the copper pot heat. Then the cleaned Buche de Puerco is added to the extremely hot pig lard, and make sure the Buche de Puerco is cut in half. Buche de Puerco is cooked to perfection, then salt is added while in the copper pot before it is served. The result is golden brown Buche de Puerco, and it's very tasty and full of natural flavor. The people that make this dish have years of practice in making this dish, but they are the experts in making Buche de Puerco. That's why I would not suggest you making this dish.
