Caldo de Pollo is a very healthy Mexican meal that requires very little time to make. This meal can be made with very little ingredients and the main ingredient is water. Caldo de Pollo takes a small process to make. All it requires is raw chicken legs and plenty of different vegetables chopped up, and added after the chicken is cooked to its fullest with it's own broth. This meal is ready when the vegetables turn soft in the cooking process. Caldo de Pollo is a very good source of protein for those meat eaters out there, but most of the vitamins come from eating the broth by itself and vegetables, because the meat itself looses all its nutrients by the boiling or cooking.
The taste of Caldo de Pollo is very tasty and warm on a cold winter day, and this meal is best eaten at noon during the day, and can be accompanied with corn tortillas and cilantro. This meal is eaten a lot in the countryside of Mexico where they raise their own chickens. I remember my grandma prepping the chickens for cooking at her house in Mexico, I just didn't like the butchering part of the chickens. But the cooking part was my favorite, because I got to add all the vegetables I wanted like: cabbage, squash, cilantro, potatoes and others.
This meal is more like a home-style cooking for the private home, because it is very hard to find Caldo de Pollo at a restaurant in Mexico. When I eat this meal in Mexico I usually get my Auntie to make it for me, and she makes the best in Mexico.
