Carnitas is basically fried pig meat that is cooked with extreme temperatures until fully done. Carnitas when fully done is golden brown, and the pork meat is very soft when cut into small pieces. Carnitas are eaten with corn toritllas which form tacos, and Mexican homemade hot sauce is added for flavor, and Carnitas are usually eaten with rice or beans. I have bought Carnitas from Mexican cities in Mexico, but the country side people in Mexico make the best Carnitas. Because, country people in Mexico have been making Carnitas for years and they have perfected the art of making Carnitas. When I go to Mexico I visit my family for their famous Carnitas which are really good to eat.
To make Carnitas the ingredients are very few, but the first ingredient you will need is plenty of fresh pig lard from the pig that was slaughtered to make the Carnitas. Then the pig lard is melted down in a heavy copper pot, which is heated to extreme temperatures. Then after the pig lard melts the fresh raw pig meat is ready to be added in cut pieces. Then the pig meat becomes Carnitas when the meat is golden brown, then salt is added for flavoring. I would suggest you readers out there to buy Carnitas instead of making them yourself, because the process is hard and it takes art and skill to make Carntitas. When eating Carnitas make sure the corn tortillas are freshly made to help the flavor come out of the Carnitas, because store bought corn tortillas are not the same compared to fresh corn tortillas.
