A few years ago, my teenage daughter decided she was going to become a vegetarian and give up eating meat because she did not like hurting animals. When I explained to her that she would not be able to eat chocolate because of the milk in it, she said she did not care, because she did not like chocolate anyway. So when I was planning a special Halloween Dinner, I had to make sure I included a special vegan menu for her to enjoy since she couldn't eat our good old' burgers and hot dogs. Here are some of the items I made for her.
1. First of all I went to the Halloween aisle at my local store and purchased all the vegan candy available for my daughter to eat and it made her feel good to hand out all vegan candies to the Trick or Treaters also. Some of the vegan candy choices include Blow pops, Airheads taffy, Cracker Jacks, Fireballs, Lemonheads, Mambas, Smarties, Now and Laters, Sweettarts and Twizzlers.
2. Next, I made one of her favorite dishes, but I made the vegan recipe I found online for Baked Macaroni and Soy Cheese.
Ingredients
• 2 cups uncooked elbow macaroni
• 2 cups soy cheddar cheese
• 1/4 cup Egg Beaters egg substitute or 2 egg whites
• 1 1/2 cups soymilk
• salt and pepper
• breadcrumbs
Directions
Preheat oven to 350 degrees. Cook macaroni according to package directions. Drain macaroni and lightly spray a baking dish with non-stick cooking spray, pour macaroni into baking dish. Mix in soy cheese, Egg Beaters, soy milk, salt and pepper. Scatter margarine around the top and cover with breadcrumbs. You may also add garlic powder to the breadcrumbs for extra flavor. Bake for 30-40 minutes or until bubbly and the top is slightly browned.
3. Finally, I made sure she had a great dessert to share and enjoy. I made her a crowd favorite, Popcorn Balls and decorated them for Halloween. Wrap each individual treat in plastic wrap. You can make these up to three days in advance.
Ingredients:
• 8 cups popcorn
• 1 cup candy corn
• 1 bag of marshmallows
• 1/4 cup soy margarine - plus extra to grease hands
Preparation:
Pour popcorn and candy corn into a large mixing bowl. Melt the soy margarine in a saucepan, then add and melt the marshmallows, stirring consistently until the mixture is smooth. Pour the mixture over the popcorn and candy corn in the large mixing bowl. Mix well with a large spoon. Stir all candy corn very well into the popcorn. Allow to cool for about 15 minutes. Grease hands with soy margarine and form mixture into desired shaped balls.
