First of all, you should know that fresh abalone is a member of the mollusk family. This large mollusk is found stuck to rocks in California. Fresh abalone can only be found in California, though canned abalone is common throughout the United States.
The edible part of the fresh abalone is the foot of the mollusk. This is the part that is clinging to the rock. It is very muscular and a surprising amount of edible meat is found in each abalone. These feet are very strong, and capable of withstanding a very strong tug without letting go of the rock. Most of the time, fresh abalone are cut from a rock with a sharp knife.
The flavor of the abalone is much like clams, but preparing it is a bit more of a challenge. The first thing you will do is cut out the fleshy, muscular foot of the abalone. You must eliminate the dark areas, and completely cut away the stomach and intestines of the abalone as well.
After this, take your fresh abalone and cut it into small slices of about an inch. Take these slices and wash them thoroughly with clean, fresh water. Take special care to wash them completely. Once clean, then you should pound them with your mallet to soften them.
Next you will take a bit of butter, oil and bacon and fry them up in a frying pan with the fresh abalone. Do not leave them cooking for very long on either side, as fresh abalone will burn rather easily. Instead, figure on 30 to 60 seconds on each side of the fresh abalone.
This fresh abalone is one of the hidden treats of the world and a tasty way to spend your vacation in California. If you visit California, then certainly trying this unique treat should be high on your list of things to do before leaving. Fresh abalone is certainly worth the travel!
