Easter Has Come and Gone - How to Deal with the Eggs Left Over?

If you have kids, you probably color eggs for Easter. But what to do with the abundance of hard boiled eggs once the Easter baskets are emptied? Try these suggestions and never worry about leftover eggs again.

Cheater's Pickled Eggs

Save the jar after finishing the pickles and put a few peeled hard-boiled eggs in the pickle juice, adding more water, vinegar and spices to taste. Set on the breakfast bar with a flashing neon sign and hubby may come straight home instead of hitting the local watering hole after work.

Egg Salad Sandwiches

Egg salad sandwiches were a staple at my house when I was young. There are numerous variations of this simple recipe, but most consist of the same basic ingredients. I peel and chop the hard-cooked eggs and add a small amount of mayonnaise and Miracle Whip, salt and pepper and slather it on bread that's been spread with more mayo or salad dressing. I can't eat an egg salad sandwich without thinking of grammar school lunches on Fridays.

Hard Boiled Egg Salad Dip or Spread

Much the same as basic egg salad, but chop the hard cooked eggs smaller when making a dip and add a bit more mayo or salad dressing and a small squirt of mustard to make the consistency a bit thinner. Stir in chopped onion and other condiments or spices (Tabasco sauce is good) and spread on crackers or celery, or dip your favorite chip.

Add Hard Boiled Eggs to Macaroni and Potato Salad

With the warmer weather come more requests for macaroni or potato salad instead of a hot dish. I chop hard boiled eggs into fairly large chunks after peeling and add to prepared macaroni or boiled and cooled potatoes, then stir in mayonnaise, Miracle Whip, chopped onion, salt, pepper, and garlic salt, tasting as I go. If macaroni salad is on the menu, I also throw in a spoonful or two of sweet pickle relish.

Cube a few slices of leftover Easter ham into a skillet with sliced or chopped hard boiled eggs, adding any combination of peppers, mushrooms, onion, green onion, tomato - even cubed, cooked potatoes - and any seasonings you prefer. Hot sauce, taco sauce or a dash of chili powder can give this skillet meal a little extra zing. Since the ham and eggs are already cooked, this is a quick and easy dish that only needs warming to get it from refrigerator to table in a flash for a hearty meal any time of day.

Devilishly Good Hard Boiled Eggs

The old stand-by, deviled eggs (sometimes called angel eggs), are always a hit at my house. Peel the eggs then cut in half lengthwise, scooping out the yolk into a small bowl. Add a small amount of mayonnaise and Miracle Whip to the yolk, salt, pepper and a touch of sweet pickle relish, smashing and mixing it all with a fork. Use a small spoon to scoop the mixture back into the hollowed out, hard boiled egg white and sprinkle paprika for a bit of color and garnish. They'll disappear quickly and you'll wonder why you didn't boil more eggs.
