What is Mexican Maiz?

As I'm sitting here in front of my computer I have decided to do my next article on Mexico's main food staple, and the name of the staple is Mexican Maiz (dried corn on the cob). Mexican Maiz is used for different things in Mexico, and in this article I will discuss what are the uses for Mexican Maiz,and how it is processed to become Mexican Maiz.

Mexican Maiz is Mexico's food staple and it's used for everything from drinks, bread, tortillas, and tamales which are my favorite. Mexican Maiz is basically dried corn on the cob that is boiled and cooked until soft. Mexican Maiz usually has real big seeds that are easy to grind once properly boiled to a full cooking process. The Mexican Maiz is usually grind to make use of this Mexican corn, then the dough is used to make tortillas by the dozens to feed Mexican Citizens every single day, which I have witnessed first hand. Mexican Maiz is the color of white once dried, and even desserts are made from Mexican Maiz, and the tradition continues to this very day.

The way Mexican Maiz is processed in Mexico is a very long process, and very easy to do. Mexican Maiz starts out as fresh corn, then it is dried in storage rooms until all the moisture is taken all out of the fresh corn. Then it's boiled until the Mexican Maiz is soft enough to grind on a grinding machine or by hand in a special stone grinder. Farmers of Mexican Maiz are the ones that keep the people of Mexico fed, but the farmers are always paid very little by the Capitalists, because the Mexican farmer is always looked down on. I think the Mexican Government should pay these low level farmers enough money to live off, for their hard earned labor. I respect the Mexican Government but one day this problem will be fixed and farmers will prosper in Mexico like many do in the United States. So next time all you readers take a bite into a fresh Mexican corn tortilla remember the process it takes to make one in Mexico the real way. There is many corn tortilla factories that buy Mexican Maiz flour, but others still use the old fashion way of this process. But, Mexican Maiz originates from the farmer to the table where you eat your meal in Mexico.
