Queso is probably the freshest cheese out in the market when it comes to fresh cheese. This cheese when done is the color of white which is cheese's original color. The taste is kind of sweet and a little salty, I usually eat this kind of cheese with flour or corn tortillas. Queso also goes good along with cooked boiled beans as a side on your plate, which is traditional in rural areas as a Mexican dish.
To make Queso it's a very hard process, and it takes years of practice and perfection. My relatives used to make it in Mexico and the process is very long and it takes a few days. It requires aging of the fresh cow's milk with aging food pills which are special for aging Queso. Then the cheese is drain out of the milk and it's separated to prepare for preparation of this delicious food. Then salt is added for flavoring, but others ingredients may be added which I am not aware of yet. Then the cheese is left to age in the refrigerator for a few days and then it's ready to enjoy.
This kind of cheese is kind of brittle, but it is perfect to make Mexican Quesadillas and other tasty Mexican dishes. I usually make cheese tacos with flour or corn tortillas which are my favorite. A lot of people just like to add Queso to their rice or other Mexican dishes. But, it's all up to your taste buds with different foods. Queso can also be used on salads and along with vegetables.
I hope all my fans out there worldwide can one day go to Mexico and enjoy this two dollar cheese in Mexico that is very fresh. Because, my aunt brought me back two bars of this cheese the other day and I just ate some Queso tacos.
