Prime rib well done is around 140 degrees. Well done prime rib will be dried out. When cooking the rib, remove from the oven around 135 degrees to allow cooking time while the roast is setting.
Prime rib medium is around 135 to 140 degrees. Medium prime rib will be lightly moist and tender being cooked all the way though just as the pink color is gone. When the inside temperature for the prime rib reaches 130 remove from the oven for setting time, before slicing.
Prime rib medium rare is a choice most people would prefer. Medium rare prime rib is when the middle of the meat is pink in color and the outer edges are cooked. Medium rare prime rib is very moist and juicy. When medium rare prime rib is cooking the inside temperature reaches 125 degrees is when the meat is ready to take out of the oven. Let the prime rib rest till the temperature reaches 130. This will give a person a perfect prime rib dinner for sure.
Prime rib rare is another high choice for most people. Prime rib rare is when the middle of the prime rib temperature is 120 degrees and the meat is pink all the way to the other edge of the meat with the out side having just a very small edge of cook meat. Prime rib rare is juicy, tender and the prime choice of meat when cook.
A prime rib roast approximate 4 to 5 pound will take one hour to an hour and 10 minutes to cook putting the oven on 450 degrees for 15 minutes then turn the over down to 325 degrees for the rest of the cooking time. Remember the roast will continue to cook once done.
A prime rib roast weighting about 10 to 15 pound will take approximate one and half hours to two and three quarter hours for cooking time.
Larger prime ribs will take longer to cook as a 20 pound prime rib can take up to 4 or more hours to cook.
