What's for Supper: Easy Skillet Supper

Sometimes you just need to throw together a skillet dinner to feed an army. Most of us don't want it to taste like it came out of a box. Here is a recipe that I use when there is not a lot of time and I want somethingwholesome for the family. They all really like it. With all my recipes, you can change them to suit your tastes.
I start with 4 or 5 potatoes. Chunk them up or slice them, it does not really matter. Start frying them in a pan you have sprayed with non-stick cooking spray. I use my electric skillet for this because it is big enough to allow me two spaces to work.

The other ingredients are onions, peppers, mushrooms, ham, and cheese. Chunk these up just like you did the potatoes. When the potatoes are almost done, start frying the ham and other ingredients. Personal note: I like the taste the potatoes pick up from the vegetables so I fry them together. I season with a bit of garlic and pepper. The ham adds enough salt for me and the kids. The man of the house has to have his served with the salt shaker, though.

Once everything is fried up, just toss it together right in the skillet. Top it with the cheese and cover the pan for a minute or two, until the cheese melts. Tradition in our house says we have to serve this skillet supper with buttered bread, applesauce, and cottage cheese. You can choose how you want it accompanied. Variations could includesausage instead of ham, or even ground beef. One of the things the kids like is for me to make this in the morning. By simply scrambling some eggs and tossing them in before topping with the cheese, turns it into a breakfast skillet. Enjoy!

    Back in the day I was feeding three teenagers and friends the quick skilit dinner was brown a pound of bulk sausage add a can of Campbells vegetarian soup, a can of rice and two cans of water. Let simmer till rice is done. This sounds like a bit better nutritionally. Thank you fer sharin'. ;-}}>
