What's For Supper: Quick Pork Rice

I enjoy cooking but sometimes the day doesn't lend itself to a two hour stint in the kitchen. It is on these days my brain kicks into hyper mode and I become creative. I either supply a tasty meal and everyone is happy or I fail miserably and even the dog walks away.

This Asian twist is a hit with my family and I hope you enjoy the dish as well. The great thing about Quick Pork Rice is the speed in preparation and the simple list of ingredients.

You need:
1. 4 cups instant rice
2. 1 pound cubed pork
3. 1 can stir fry vegetables
4. 1 teaspoon Garlic powder
5. Sesame oil

Make the rice according to the package directions. Set it aside. Add two tablespoons of sesame oil to a hot pan and then add the pork. Brown the pork and make sure it is completely cooked. Add the stir fry vegetables and garlic. Continue stirring until the veggies are nice and hot. Combine all the ingredients in a large bowl and toss to mix well.

I serve this with fried wonton wrappers and a salad. You may want to be more creative and serve it with crab rangoon or egg rolls. I prefer soy sauce as a condiment but my kids like sweet and sour sauce drizzled over their quick pork rice.
