Ingredients needed for wheat free carrot cake:
Grated carrot -- 140 gram
Light muscovado sugar -- 175 gram
Olive oil -- 175 ml
Beaten eggs -- Three
Raisins -- 100 gram
Grated Orange zest - one
Rice flour -- 125 gram
Nice cornmeal -- 50 gram
Baking Soda- 1 teaspoon
Baking powder - 3 / 4 teaspoon
Ground cinnamon -- 1 teaspoon
Ground nutmeg - 1 / 2 teaspoon
Icing sugar - 100 gram
Orange juice - 1 table spoon
Preparation:
1) First of all line a baking tin, which is approximately 7 - 11" with baking paper.
2) Put muscovado sugar, beaten eggs and olive oil into a large mixing bowl and mix them well.
3. After this stir in the grated carrots, raisins and grated orange zest and mix gently.
4. Now put the rice flour, cornmeal, baking soda, baking powder, cinnamon and nutmeg into the bowl. Mix them together until every ingredient is moistened. Always do not over mix.
5. Now pour the mixture into the baking tin. Bake it for about 45 minutes. You can check if it has been baked by piercing the centre of the cake by a metal skewer.
6) Mix the orange juice and icing sugar together for making the frosting. After this, drizzle over the cake.

how is it hat u can say that i is being copied. The receipe is well known through out the world. and i think there is no copying.
This recipe was created by myself, and unfortunately Prabhat nair seems to have decided to ignore copyright rules and reproduce it as their own recipe.
