White Bean Dip

This is a great dip for kicking back, watching the game, or just lounging around the house. It can hold it's own at a dinner party too

Ingredients

Serves 8
1/4 cup soft bread crumbs
2 tbsp dry white wine or water
1 15 to 19 ounce can white kidney beans, rinsed and drained
1/4 cup slivered almonds, toasted
1/4 cup lemon juice
2 tbsp olive oil
1/4 tsp salt
1/8 tsp cayenne pepper
3 cloves garlic, minced
2 tsp fresh or 1/2 tsp dried snipped fresh oregano or basil or dried oregano or basil, crushed
to serve Pita chips or vegetable dippers

Directions for White Bean Dip

Using a small bowl, combine bread crumbs and wine. Set aside and let soak for 10 minutes

Meanwhile; in a food processor or blender, combine beans, almonds, lemon juice, olive oil, salt, cayenne pepper, and garlic. Cover and process until almost smooth.

Add bread crumb mixture and process until smooth.

Stir in oregano and chill for 2 to 24 hours.
