Vegan baking is baking without the use of dairy, eggs, or any animal products. I have had the privilege of working at Pattycake Vegan Bakery for over a year now, and I have to say, although I am not Vegan, that the baked goods are out of this world!
We are located in Columbus, Ohio, and, I am told by my boss, are one of only a handful of vegan bakeries in the United States. Most of the other ones, unsurprisingly, are in larger cities such as New York City, L.A., and Philadelphia. Often we get people from out of town who are ecstatic to find us. The bakery received a lot of help by being featured in an article in VegNews Magazine.
It's hard making the conscious choice to go Vegan. There are animal products in everything! Even if a product doesn't have meat in it, there may be whey as a binder, the sugar may be processed through bone char. It is very hard in today's multi-processed, fast-food nation to separate animals from your food should you choose not to eat them.
Here at Pattycake, we use tofu or ground flax as a binder, and it works amazingly well to "veganize" recipes. We have scrumptious cupcakes, muffins, cookies, and on the weekends, sticky buns as big as your head! Many people who try our stuff love it, and can't even tell the difference.
You can bet , also, that you're getting a good product, as the bakery uses as much local and organic produce as available. It's just part and parcel of Pattycake's concern for the environment and health. We also compost and recycle.
My favorite, all time treat, if I have to choose, probably would be the Spelt Fudge Brownie. These dense little morsels eat like a truffle, yet have no hydrogenated oils and are very low gluten. Many people have allergies to wheat products or gluten, and have a hard time finding any options for birthdays, special occasions and other memorable times. The bakery strives very hard to accommodate these customers, as well as the Vegan and health-conscious crowd.
