Wholemeal Banana and Cinnamon Cake

A New Twist to the Ever-favorite Banana Cake

Banana cake is a family favorite, but this recipe goes a step further and adds some spice:

Utensils

1 large glass mixing bowl

1 medium glass mixing bowl

1 cup measuring jug

1 x 8" round cake tin - greased/floured and/or lined with baking paper

Ingredients

3 ripe medium sized bananas (mashed)
½ cup milk
125g butter (approximately 1.5 ounces)
2 eggs
1 tablespoon cinnamon
½ cup raisins/sultanas
2 teaspoons vanilla essence
1 cup sugar (or substitute honey)
2 cups wholemeal self-raising flour
3 teaspoons baking powder
icing sugar for dusting
Whipped cream or ice-cream to serve

Method

In large mixing bowl -

Cream butter and sugar until fluffy.

Add one egg at a time and mix well until blended.

Add vanilla essence and mix.

Beat in the mashed bananas and stir through raisins/sultanas.

In medium mixing bowl -

Sift flour to which has been added the cinnamon and baking powder into the bowl.

Mix well.

Add half this flour mixture to the ingredients in the large mixing bowl and stir well.

Add milk then the remaining flour mix.

Fold all ingredients together into a smooth batter.

Pour batter into the prepared cake tin.

Bake for 45 minutes at 180-degC fan forced, 200deg-C convection (

When cooked, dust with icing sugar.

Serve with whipped cream or ice-cream or on its own.
