Wilted Lettuce (Recipe)

Possibly the Greatest Way to Enjoy Fresh Salad Greens.

If you eagerly await the arrival of spring because it means fresh lettuces and salads, here is a recipe for you! Tiny baby greens and watery iceberg lettuce do not stand up to the warm dressing in this dish, so use your favorite leaf lettuce, spinach, or wild greens.

INGREDIENTS:
6 slices bacon
1/2 cup sliced green onion
1/4 cup organic vinegar
1/4 cup water
4 Tablespoons sugar
1 chopped, hard-boiled egg
6 radishes, sliced
8 cups of leaf lettuce, torn into pieces and placed in large bowl

Cook the bacon until crisp; drain and crumble, reserving 1 Tablespoon of the drippings.
Add onions to the reserved drippings and cook until tender.
Add vinegar, sugar, water, and cook, stirring until boiling.
Pour hot dressing over the lettuce; quickly toss to coat. Garnish with crumbled bacon, egg, and radish slices.

Serves 6, but everyone will want more.

Low Fat Tip: Use turkey bacon, and fry it in a Tablespoon of olive oil.
("Bacon and drippings" are definitely not on my menu anymore.)

  • Delicious salad that will impress company.
If your salad becomes too limp from the warm dressing, try using more spinach to add some stability to the greens.

    I'll have to try this with the turkey bacon and substitute Splenda for sugar. Sounds good.

    This sounds so yummy. A restaurant nearby serves something similar, and it's one of my favorites. Speaking of favorites, I'm adding you to mine! ;-)
