Wilton Cake Release: Never Have a Cake Stick to the Pan Again

Emily Harmon
I have been baking and decorating cakes of all kinds for several years. One of the biggest heartbreaks for any baker is to have a cake stick to the cake pan. Even if you take your time to properly and carefully grease and flour the pan, sometimes the cake sticks anyway. Fortunately, after a few total cake disasters, I discovered Wilton Cake Release. Wilton Cake Release is a product that you use in lieu of the traditional greasing and flouring of a cake pan. A liquid, Wilton Cake Release claims to keep any cake from sticking. But does Wilton Cake Release work? Here is this cake baker's first hand experience with the product Wilton Cake Release.

Wilton Cake Release is purchased in an 8 ounce bottle. The product is a thick liquid that must be shaken well before using. To grease a pan using Wilton Cake Release, simply squirt a small amount of the liquid into your pan. Using a pastry brush, carefully brush Wilton Cake Release on all surfaces in the cake pan. Be sure to fully coat edges and crevasses. Then simply add your cake batter and bake your cake as you normally would.

The first time I used Wilton Cake Release, I was thrilled with the results! It was almost as if my cake couldn't stick to the sides of the cake pan. I gave Wilton Cake Release a tough test for a first try. I baked a bunt cake using an intricate tube pan. My tube pan is admittedly not of great quality and I have had more than one cake ruined because it stuck so badly in the deep crevasses of my pan. When I removed the cake from the oven after having used Wilton Cake Release, the cake was already obviously pulling away from the sides of the pan. After cooling for a short while on a rack, I inverted the pan and the cake slid out easily. Not one single piece of the cake stuck anywhere. Wilton Cake Release did a fabulous job of keeping my cake from sticking to the pan, and the resulting cake was beautiful.

Wilton Cake Release is basically a mixture of corn starch and soybean oil. I was a little nervous that this mixture would add an off taste to my cake, unlike the tasty original, butter. But I was pleasantly surprised to find that Wilton Cake Release did not alter the flavor of my cake at all.

Wilton Cake Release is fairly inexpensive, at around $3.50 per 8 ounce bottle. One bottle of Wilton Cake Release will grease 17 cake pans, according to Wilton's website. Wilton Cake Release is typically not found with grocery items. Instead, you must venture to find the other Wilton cake items in the cake decorating or crafting section of the store. Large retailers such as Wal-Mart often carry the product, as do specialty stores such as Michael's and Hobby Lobby.

If you bake, and if you have ever been burned by a cake sticking relentlessly to the pan, Wilton Cake Release is the product for you. Wilton Cake Release works like a charm, and this baker wouldn't be caught in the kitchen without it.

I have used Wilton cake release with other cakes and it has worked beautifully! but last night (attempt one) and tonight (attempt two) at making a Chocolate Jaffa fudge cake I have found that it has not worked on the bottom of my cake tins.. The sides are fine the bottom has stuck two nights in a row now... Grrr... Not sure what is going wrong :(
