Wings: A Great Food For any Event

Grilled Margarita Wings recipe
1 cup lime juice
1 cup silver tequila
1 cup honey
2 teaspoons crushed red pepper flakes
2 teaspoons salt

Mix all ingredients together. Divide mixture in half. Put wings in 1/2 the marinade mixture and marinade for 4-6 hours.

Bake wings in 350 degree F oven for 25-30 minutes. At this point, refrigerate the wings until ready to finish preparation and serve.

Put wings on medium/hot grill until heated through. Baste wings with remaining 1/2 of marinade mixture while grilling. Serve.

Bayou Buffalo Wings recipe
Breading
2 cups all-purpose flour
2 teaspoons granulated garlic
2 teaspoons lemon pepper
3 teaspoons rosemary and thyme (finely chopped)
2 teaspoons salt and pepper or Creole/Cajun seasoning salt

Egg Wash
4 eggs
1 cup milk

Sauce
1/2 cup Southern Comfort
1/2 cup hot sauce
1/4 cup (1/2 stick) melted butter
1 tablespoon Worcestershire sauce
24 chicken wings or drumettes
Vegetable or cooking oil for deep-frying

In a bowl, blend all of the dry ingredients for the breading.

In a separate bowl, make the egg wash by blending the eggs and milk. Add the chicken and coat well. Place coated chicken in breading and toss. Place the breaded chicken in a deep fryer or in pot that has enough hot 350ยบ F oil to cover chicken. Cook until golden brown.

In a large bowl, mix all ingredients for the sauce and toss in cooked chicken, mix well

Coca-Cola Wings recipe
4 pounds chicken wings
10 ounces Coca-Cola
1 cup packed brown sugar
Garlic salt
Onion salt
1 tablespoon soy sauce

Place chicken wings a in shallow casserole. Sprinkle with garlic and onion salts. Pour mixture of Coca-Cola, sugar and soy sauce over all. Bake at 325 degrees F for 3 to 4 hours or until liquid has evaporated and wings become sticky.

Hawaiian Wings recipe
4 pounds chicken wings
1/4 cup butter
1/2 cup tomato ketchup
2 cloves garlic, minced
1 cup fine dry bread crumbs
1 (14 ounce) can pineapple chunks
2 tablespoons brown sugar
2 tablespoons fresh ginger, grated
1 tablespoon Worcestershire sauce
1 teaspoon Asian style hot sauce

Prepare chicken wings by cutting off wing tips and separating the wing at the elbow joint (discard tips or save for making stock).

Melt butter in shallow baking pan in 400 degree F oven.

Stir together ketchup and garlic and brush over wings, then roll them in the bread crumbs to coat evenly. Place in pan, turning to lightly coat with butter. Bake for 20 minutes.

Meanwhile, drain pineapple, reserving the juice. Add water to the reserved juice to make 3/4 cup liquid. Stir in the brown sugar, ginger, Worcestershire sauce and hot sauce.

After wings have cooked 20 minutes, turn them over, then pour on sauce the sauce. Bake for about about 20 minutes longer or until chicken is tender. Add the pineapple for last 5 minutes of cooking. Finished wings should be lightly browned.

Dragon's Breath Wings recipe
These are as delicious cold as they are straight from the grill.

Marinade
2 tablespoons rice wine
2 tablespoons soy sauce
1 tablespoon ginger root, grated

Sauce
1 garlic clove, minced
1 tablespoon ginger root, grated
4 tablespoons soy sauce
2 tablespoons rice wine vinegar
1 tablespoon sugar
1 tablespoon sesame oil
1/4 teaspoon hot chili oil
2 pounds chicken wings
Chopped green onions

Combine the marinade ingredients in a large plastic bag. Add the chicken wings to the bag and marinate at least one hour in refrigerator.

Drain the wings. Grill until cooked, or bake on middle shelf of a 400 degrees F oven for 40 minutes.

Mix the sauce ingredients together until thoroughly blended.

Arrange wings on platter. Pour sauce over them to completely cover. Garnish with finely chopped green onion.
