Winter Cake Recipes---Italian Cream Cake

This winter cake recipe for Italian Cream Cake is one of the most decadent cake recipes I have ever eaten! An Italian Cream Cake can definitely hold its own within the realm of decadent winter holiday desserts! This particular recipe is an old tried and true recipe from my days as a wife to a man trying to create my own collection of solid decadent dessert recipes which could compete with any woman on the planet! So you know this recipe is the bomb! Make it once and you'll be crowned with the way into any man's heart; right through his stomach!

Italian Cream Cake

Ingredients:
1 stick margerine
1/2 cup true shortening (Crisco)
2 cups sugar
5 egg yolks and whites separated
1 teaspoon baking soda added to 1 cup buttermilk
2 cups flour
1 cup chopped nuts
1 cup coconut
1 teaspoon vanilla
3 nine inch cake pans coated with shortening and flour

Directions:
1. Preheat oven to 350 degrees.
2. In a large bowl cream together the stick of butter, 1/2 cup shortening and 2 cups sugar.
3. Use electric mixer to beat in the 5 egg yolks, one at a time.
4. Still beating with the electric mixer, slowly add the 2 cups flour a little bit at a time alternating the flour with the teaspoon baking soda and buttermilk mixture.
5. Combine thoroughly!
6. Add the cup chopped nuts, the cup coconut and the teaspoon of vanilla.
7. Beat until stiff.
8. Fold 5 egg whites into the batter and do not beat again.
9. Pour batter evenly into the 3 nine inch cake pans coated with shortening and flour.
10. Bake at 350 degrees for 25 minutes or until the cakes spring back when touched in the middle.

Icing

Ingredients:
1 stick butter
1 box confectioners sugar
1 8 oz. package cream cheese
1 teaspoon vanilla

Directions:
1. Place all ingredients into a large bowl, beat well with an electric mixer and use to build 3-layer cake when cakes are completely cooled.
