Ingredients:
8 medium-sized washed potatoes with skin on
Boiling water (lightly salted if desired)
4 rashers of bacon, rind removed and chopped roughly
1 large onion chopped roughly
8-10 mushrooms, sliced
2 tablespoons butter
Cracked black pepper and chopped chives for garnish
Method:
Wash potatoes and chop each into about 6 pieces.
Place potatoes into saucepan of boiling water and cook until just tender then drain in a colander.
In a large frying pan, cook bacon and onion for a few minutes.
Add half the butter to pan and toss in the mushrooms. Stir mixture occasionally until mushrooms are cooked.
Place bacon, onion and mushroom mixture into a heatproof serving dish.
Add the remaining butter and the potato pieces to the pan and fry until browned.
Combine potatoes with the bacon/onion/mushroom mix and keep warm in a low oven.
Before serving, season with cracked black pepper and sprinkle with chopped chives.
Nice with chicken, sausages, veal, lamb or pork. Serves 4.
Refrigerate any leftovers for a lunch-box treat.

Pat - a rasher is a long, thin slice of bacon. We also have "short cuts" which are just the nice end bit with all the bacon and just a little fat. Now I wonder what you call these over in the US? Also, if you didn't have bacon on hand, you can put chopped ham in this recipe.
Sounds really good. Mind if I ask what a rasher is? A slice? A package? American English and Australian English don't always line up on terminology. (:>))
