Ingredients

Serves 6
5 chicken thighs
5 large potatoes
1 cup sliced carrot chips
1-2 chopped celery stalks
6-8 cups chicken broth
to taste garlic salt
to taste pepper
to taste dried onions

Pour homemade chicken broth into large cooking pot.
Set this aside until the next couple steps.

Cut up chicken.
Depending on your preference, you might have small or large cubes or slices of chicken for your soup.

Add all ingredients to the broth.
This is where you can place the chicken, potatoes, carrots, and celery into the broth.

Add seasonings to taste.
Because this is a budget recipe, I chose garlic salt, pepper, and dried onions, as they are low-cost and most people have them on hand.

Simmer on low for about 1 hour.
You'll know it's done when the vegetables are soft and everything is heated throughout.

Serve with your favorite bread.
I like to serve homemade bread or biscuits with chicken soup. But any bread your family prefers will do.
Tip
I usually use homemade chicken broth drained from chicken thighs I have cooked on a previous night.

    I ate LOTS of homemade chicken soup when I did the low-carb thing last year. No potatoes or noodles, just chicken, broth and veggies. Loved it, and it sure helped with the weight loss. I'm stocking up on chicken and veggies again to get back on the low-carb train tomorrow.

    this is great but you can also use a leftover chicken and boil that with some water and salt that will be done when it reaches a yellow color put that in firdge over night and scoop off the fat warm it up and add as many vegies as you would like. Serve with matzaballs pasta or rice
