Winterfresh 2010 Fudge Recipe

Winterfresh fudge is a popular and delicious holiday treat that you can make for Christmas 2010. It's not as hard to cook as some folks think, and it's a lot of fun if you get the whole family to participate in the cooking.

Winterfresh fudge is a tasty, rather decadent fudge with a mint filling and a chocolate mint frosting garnished with candy canes. It isn't exactly low fat, but for Christmas indulgence there is nothing better.

Winterfresh Fudge

Brownies:

6 ounces unsweetened chocolate
1 cup butter
1 cups sugar
1 cup brown sugar
2 teaspoons vanilla extract
4 eggs
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1 cup mini dark chocolate morsels

Mint Filling:

2 - 8 ounce packages cream cheese, softened
1/3 cup sugar
2 eggs
1 teaspoon mint extract
2 drops green food coloring

Frosting:

1/4 cup butter, softened
1 1/2 cups confectioners' sugar
2 ounces unsweetened chocolate, melted
1 teaspoon mint extract
1 tablespoon milk, plus more to thin
8 candy canes, crushed, for garnish

Preheat oven to 350 degrees. In a small saucepan, melt chocolate and butter together over low heat, stirring constantly. Let cool. In your stand mixer, combine the chocolate and butter mixture, sugar, vanilla and eggs, one at a time. Mix in flour and salt and beat for 30 seconds. Stir in chocolate chips.

For the mint filling, Beat the cream cheese in the stand mixer, or with a hand held until it is smooth. Add sugar, eggs and mint extract. Beat until it is well incorporated. Add food coloring, and mix well again.

Pour half of the brownie mixture into a greased 9 x 13 pan. Pour in the filling and spread evenly. Pour in the other half of the brownie batter on top. Bake for 45 minutes, or until sides start to pull apart and brownies pass the toothpick test. Let cool.

For the frosting, beat butter with an electric mixer until smooth. Add sugar and melted chocolate butter and beat until well incorporated. Add mint extract and enough milk to get frosting to your desired consistency. Spread frosting over brownies and garnish with broken candy canes.

Winterfresh fudge is a delicious and fun choice for Christmas 2010.
