One of the things that make Sirromet wine formation process unique is actually due to a law that only Australia has. Australia forbids the adding of sugar to the wine fermentation process. This allows for a fuller and more natural wine to be fermented, giving it a bolder and richer overall flavor.
The Sirromet wine making starts the minute the grapes reach the processing plant where they are sent through the crusher. The must of the grapes are then moved through tubes to stainless steel tanks. At this point the must is around 25 to 30 degrees Celsius which is important to extract the color and tannins from the skins. Over a short period of time the skins will start to come to the surface where they will be softly plunged to help further bring out the color and tannins of wine.
During the fermentation process both naturally occurring and specially made cultured yeast for a given flavor of wine. The yeast helps convert the natural sugar content of the grapes into alcohol.
Red Wine takes around seven to twenty one days for fermentation, with the main fermentation being over within the first seven days. Post fermentation further extracts the tannins of the grape and helps soften the wine. Tannin also acts as a natural preservative in the wine.
Sirromet only add 1 preservative to their wines and this is the 220 (sulphur dioxide). Once the bottle of wine has been opened the sulphur dioxide is released into the atmosphere and you are not consuming it. However the bottle of wine or bottle(s) have to be consumed in approx 2 days time.
There are three types of barrels used at Sirromet; they are French oak, German oak and American oak barrels. French oak barrels are the most expensive due to having to import them from France. American oak can be made in Australia. Each of these three barrels cost anywhere from $600 to $1200 each. Wine gains characteristics from the barrels and the lees (sediments) in the barrels.
Sirromet was founded by Gold Coast businessman Terry Morris. Terry Morris the Managing Director of Morris International Group of Companies and the founder and owner of Sirromet started out in the business world in manufacturing and information technology ventured into the wine business and opened Sirromet in 1999. One of the Morris's family's main interests outside of wines is motor sports where Terry Morris's son Paul Morris drives the Sirromet sponsored car. Paul Morris, like his father is on track to quickly becoming a force to be richened with in the world of motor sports.
Sirromet opened to the public in 2000 and quickly established itself as the leader in wines in Australia having won a number of prestigious awards in a very short time. Over the last six years Sirromet has won over 230 awards from the wine industry and looks to continue on that same course for some time to come.

Very good article, I myself just found out that the lesser time of fermentaion the sweeter the wine. I am wondering though, you mentioned they don't add sugar. Do they add a different sweetner or the flavor is all from the grapes?
