2 cups turkey meat
3/4 cup salsa, any style
1/4 cup turkey broth
10 flour tortillas
8 oz sour cream
2 cups Colby-Jack Cheese
Directions for World Famous Turkey Enchiladas

Preheat oven to 375 degrees.2
Combine turkey, salsa, and broth in a large skillet. Heat until bubbly.3
Spoon turkey into tortillas, along with a tablespoonful of sour cream and about the same amount of cheese.4
Fold tortilla around the turkey mixture and place in a greased 9x13 cake pan, next to one another.5
Top with remaining sour cream and shredded cheese.6
Bake at 375 degrees for 30 minutes or until the cheese is melted.Tip
This is a good use of your left over holiday turkey. Take the wings, legs, thighs and any other part of the turkey that didn't get eaten and put it into a large pot of water. Season with dried cilantro, sea salt and chili powder, and boil for at least two hours until the meat falls off the bone. This will give you way more turkey than you will need for this recipe, once all the bones are removed, freeze what you aren't using.
