World's Best Meatloaf

Even meatloaf haters seem to enjoy this recipe. My kids won't touch anyone's meatloaf but mine, but will travel if they know it is for dinner. My parents who taught me to cook will only eat this recipe.

Ingredients

Serves 10
3-5 lbs ground beef
1 box Stove Top Stuffing
5 tbs Pesto
1 tbs minced garlic
1/4 cup Italian Dressing
medium Onion Chopped
season to taste Red Pepper
1/2 lb Pepper Jack Cheese
Optional Mushrooms (fresh)
1/4 Cup Horseradish (optional)
1/4 cup Coursly grated Parmesean and Romano Cheese
1 egg

Directions for World's Best Meatloaf

Mix in large mixing bowl the ground beef, stuffing mix, egg, pesto, garlic, red pepper, Italian dressing, chopped onions and Horseradish. After thoroughly mixed flatten the mixture in a casserole dish and push mushrooms into the meat, roll into a ball and flatten again. Add sliced pepper jack cheese and form into loaf by bringing up the edges of the mixture. Try not to let any cheese show or it will melt into the pan while cooking. Top with shredded Italian cheeses and back at 375 for at least an hour, covered with aluminum foil. Take off to brown top for about 10 to 15 minutes.

Homemade garlic Mashed Potatoes or Horseradish Mashed potatoes.
Tip
Horseradish is optional, but gives it more of a zing. If it is not as potent more may be needed to bring out the flavor. A second egg may be needed if it turns out dry after it is mixed. Cooking times may vary depending on how much meat is used and how round the meatloaf is formed prior to cooking.
