1-1/2 pounds red potatoes, peeled and grated
1 medium onion, peeled and finely chopped
3 tablespoons cornstarch
1 tablespoon finely chopped fresh parsley
dash of cracked pepper
2 tablespoons ponzu sauce
Mix all the together in a large bowl. Form 3" patties and fry gently in a lightly olive oiled pan over medium heat for 10 minutes. Flip and fry for another 10 minutes until crisp and golden brown on both sides. Serve immediately garnished with a dollop of sour cream and scallions.
