Yum, Cheeseburger Soup!

A Delicously Different Twist on an American Favorite

My first encounter with Cheeseburger Soup was at the restaurant attached to the truck stop i used to work at. Their version, while tasty, was too salty and really kinda bland. After many hours searching, this one is the winner. Cook up and enjoy!

Ingredients

Serves 8
1/2 lb Ground beef
3 1/2 c Dieced potatoes
1 c Chopped carrots
1 c Chopped onions
3/4 c Chopped celery
3 c Chicken stock
1 tsp Dried basil
1 tsp Dried parsley
5 Tbs Butter
8 oz Velveeta, cubed
1 1/2 c Milk
1/4 c Flour
1/2 tsp Salt and pepper

Saute beef and onions; drain.

Saute celery, carrots, parsley and basil in 2 Tbs of butter. When carrots are tender, add chicken stock and heat to a boil. Add potatoes and beef, simmer 10-12 min, or until potatoes are tender.

Melt remaining butter an separate skillet. Add flour and wisk in milk until thick and smooth. Add to soup and bringto a boil. Add salt, pepper, and cheese. When cheese is melted, soup is done.
Tip
Total prep time is about 3 to 3 1/2 hours, and it makes about 6 to 8 servings.
