1 1/2 cup powdered sugar
1 cup chopped almonds
2 cups oats
dash salt
3 1/2 cups all purpose flour
2 teaspoons almond extract
2 cups softened butter

Preheat the oven to 325 degrees. Toss the oats in a food processor and chop until the oats reach a powdered consistency.

Mix the oats with the almonds, flour, and salt. In a different bowl, cream the butter with the almond extract and the powdered sugar. Slowly add the dry ingredients to the wet ingredients until well mixed.

Place small scoops of the cookie dough on a cookie sheet. Use ordinary scoops or shape the dough into different shapes. Bake the cookies for 15 minutes or until golden brown. Remove the cookies from the oven and let cool slightly.

Fill a plastic bag with more powdered sugar and drop the cookies in the bag. Close the bag and shake gently, coating each cookie with powdered sugar. Store the cookies in an airtight container or a zippered plastic bag.
Tip
Try placing the cookies on a piece of newspaper or a cookie rack. Fill a flour sifter or shaker with powdered sugar and gently shake over the top for a mess-free decorating option. If you want to tone down the almond flavor, use vanilla extract in place of the almond extract. For a thicker or chunkier texture, leave the oats whole.
