1/8th cup olive oil
1lb chicken thighs
3/4th cup white wine
1 cup chicken broth
2 yellow onions
3 tablespoons italian dressing
1 pkg chopped brown mushrooms
1/4th cup garlic and herb seasoning
salt and pepper to taste
Rub the garlic and herb seasoning all over the chicken thighs and set to marinade for 30min-1hour
Chop up the onions in 2in slivers, and mix up Italian dressing in a bowl to marinade. Let sit for 15 min
Pour 1/8th cup olive oil in Large Saucepan, and brown both sides of chicken thighs (approx 5 min on each side) on medium to med high heat depending on your stove.
Pour off olive oil, and pour in onions. Let simmer about 5 minutes, then pour in the wine. Let the wine and onions boil about 10 more minutes, then add the mushrooms
Cook the mushrooms, onions, chicken, and gently stir in 1 cup chicken broth.
Let that cook about 10-15 minutes until liquid becomes thicker, then serve!
