Serves 4
4 Chicken breast (preferrably boneless skinless, appx 4-6 oz)
1/2 tsp Sea salt
1/2 tsp Black pepper (fresh coursely ground)
1/8 tsp Cayenne pepper
1/4 cup Butter, cubed
1/4 cup Chicken broth
2 tbsp Lemon juice (fresh)

Directions for Zesty Lemon Chicken Piccata

Using a mallet, flatten chicken to approximately 1/2-in thickness. Moisten chicken with appx 1/3 of the lemon juice. Season both sides with salt, black and cayenne peppers.

Melt butter in a large skillet over medium heat. Brown chicken breasts. Stir in chicken broth. Bring to a boil, then reduce heat. Simmer uncovered for 15 minutes or until chicken is no longer pink. Drizzle remaining lemon juice over chicken.

Plate and garnish with lemon slices and fresh parsley, if avalable.
Tip
White wine can be substituted for the chicken broth in this recipe to add a rich and earthy flavor to the dish.
