Zucchini Bread Recipe

Zucchini bread is a wonderful treat that can be made for many different occasions. It can be eaten as an appetizer, side dish, dessert, or even breakfast. The possibilities are endless and entirely up to you.

The following ingredients are necessary to make this delicious zucchini bread. The quantities needed are also listed:

  • 1 teaspoon of ground nutmeg
  • 3 ¼ cups of all purpose flower
  • 1 ½ teaspoons of salt
  • 2 teaspoons of baking
  • 1 teaspoon of ground cinnamon
  • 3 cups of sugar
  • 1 cup of vegetable oil
  • 4 eggs
  • 1/3 cup of water
  • 2 cups of graded zucchini
  • 1 teaspoon of lemon juice
  • 1 cup of chopped walnuts or pecans

You will also need:

  • 2 standard loaf pans
  • Nonstick spray

Follow these steps to make this zucchini bread:

  1. Preheat the oven to 350 degrees.
  2. Beat the eggs and add water, oil, zucchini, nuts, and lemon juice, making sure to mix thoroughly.
  3. In a large bowl, sift flour, salt, nutmeg, baking soda, cinnamon, and sugar.
  4. Combine the wet ingredients with the dry ingredients, by pouring the wet ingredients into the larger bowl and mixing again.
  5. Spray the nonstick spray on the loaf pans.
  6. Bake the mixture in 2 loaf pans for 1 hour (if the bread can come out clean it is done).

    I never tried it with pecans and lemon juice, I just might have to try this one. I love zucchini bread.
