Zucchini Bread Recipe with Crumb Topping

This Zucchini Bread Recipe makes great muffins too:) Go to my profile page for an alternative Chocolate Chip Zucchini Bread Recipe (You can still apply the low fat cooking method;)

Preheat oven to 325°F.

Grease and flour two 8 x 4 pans

Beat:

3 eggs until light and frothy

Mix and add beaten eggs:

½ cup vegetable oil

½ cup applesauce (low fat cooking achieved by substituting half of oil with applesauce)

Stir in:

2 cups grated zucchini

2 tsp vanilla

Combine, then stir in above ingredients:

3 cups flour

3 tsp cinnamon

1 tsp baking soda

¼ tsp baking powder

½ tsp salt

½ cup chopped walnuts (optional)

Cook 40-50 minutes.

Crumb topping:

¾ cup brown sugar

½ cup flour

3 tbsp butter

2 tsp cinnamon

½ tsp nutmeg

½ cup walnuts (optional)
