Zucchini Bread Recipe: The Ultimate Zucchini Dish

Who would have ever though that, like the tomato, the zucchini is actually a fruit? Referred to as a vegetable in the culinary world, the zucchini is thought to have originated in America. It is a member of the cucumber and melon family and is typically served cooked. The zucchini comes in not only a green color, but yellow and combined yellow and green. Different shapes and sizes can also be found from "cucumber-shaped" to bottle-shaped.

You can use this fruit, or vegetable, in a lot of dishes that call for squash as they are often cooked together. There are many different ways you can whip up a meal made from zucchini, but here is my all time favorite. The zucchini bread!

Ingredients:

3 cups all purpose flour
1 teaspoon salt
1 teaspoon soda
1 teaspoon baking powder
1 teaspoon nutmeg
2 teaspoons cinnamon
3 eggs, beaten
2 cups white sugar
1 cup brown sugar
1 cup vegetable oil
3 teaspoons vanilla flavoring
2 cups of grated squashed, drained and fluffed
1 cup pecans (or walnuts)
½ cup raisins

Directions:

1. Preheat oven to 350 degrees and grease two regular size loaf pans.

2. Mix flour, salt, soda, baking powder, nutmeg, cinnamon, and both sugars in large mixing bowl.

3. Add the oil and vanilla flavoring and mix well.

4. Combine the eggs.

5. Add the nuts and raisins.

6. Fluff zucchini one more time and add to the mixture.

7. Pour into greased loaf pans place in oven.

8. Bake until toothpick comes out clean.
