Zucchini Casserole

Ingredients:

2 lbs or 6 cups sliced zucchini (quarters)

¼ cup chopped onion

1 can cream of chicken soup

1 cup sour cream

1 cup shredded carrot

1 8 oz package herb seasoned stuffing mix

½ cup margarine or butter- melted

Preparation:

Mix together (saute) till tender - zucchini and onion - drain well

Add in Soup, sour cream and carrots ( in Pot)

Combine stuffing mix and melted butter ( in separate bowl)

- Spread half the stuffing mix down in a 12 x 7 pan or 9x 9 pan (which I prefer)

- Spoon in mixture

- Top with the remaining stuffing

Bake at 350° for ½ hour

This recipe is absolutely wonderful. Its a crowd pleaser! It pairs nicely with a chicken entree. Usually we can make it last for 2 dinners and it is great for a leftover for a snack or dinner the next day.

It's fairly fast to prepare, usually takes around 20 minutes or less and the more you make it the faster you can get. I have substitute the herb seasoned stuffing for chicken stuffing and it takes just as good. I actually prefer to use Stove Top Stuffing, in my opinion it makes anything taste better. It doesn't have a strong zucchini taste, I have served it to people that didn't even like zucchini and they enjoyed this side-dish. It has a creamy taste as if it had cheese it in. People are surprised when I tell them the recipe and they could swear I put cheese it in. I think its the sour cream that gives it that cheese texture.

The topping has a nice crunch to it. Usually the last 5 minutes the stuffing mixture on top turns a golden brown color. Its a very colorful and pretty dish. Would go nicely at Thanksgiving. Its a filling dish.

I hope you enjoy preparing and serving this tasteful dish to your family. I am sure after you have it once you will continue to make it for years as part of your regular menu. It also makes a great dish to bring to a pot-luck or family get together. You could always prepare it the night before and then bake the next day if you are on a time crunch. It will heat nicely.

Side note- Its a great way to get kids to eat some veggies, because it doesn't have a strong vegetable taste. Just don't tell them its zucchini. Make up a different name for the dish and they will never know.
