Zucchini, Chicken and Dumplings

Preheat oven 400 degrees

Layer in a 13" x 9" greased baking dish:

2 medium zucchinis sliced 1/4 inch thick
1 1/2 pounds boneless chicken breast cut in 3/4 inch cubes

In a 1 quart casserole, melt:
2 Tablespoons butter

Stir In:
3 Tablespoons flour
1 teaspoon salt
1 teaspoon onion powder

Slowly add and stir a little at a time:
2 cups milk

Pour this white sauce over chicken and zucchini. Bake until bubbly (about 1/2 hour).

Rinse 1 quart casserole dish and place inside:
3 cups biscuit mix
1 Tablespoon parsley
1/2 cup Parmesan cheese

Add and stir in enough water to make soft dough. Drop by teaspoons or tablespoons onto hot casserole.

Bake 20 more minutes.
