Zucchini Entree Recipe

This Zucchini Dish May Be Prepared as a Stove Top or Casserole Entree

Zucchini is usually such a plentiful produce item during the summer months and it is something that almost everyone enjoys; finding new recipes to use this vegetable can be a challenge. This recipe allows you to add this versatile vegetable to an entree that sets the stage for satisfying meal. And best of all, from start to finish you can prepare this dish in less than thirty minutes.

Ingredients:

1 lb. ground turkey
1 cup onion, chopped
1 16oz jar spaghetti sauce
1 cup quick cooking brown or white rice
2 medium zucchini, cut into slices or cubes

Directions:

Brown ground turkey and onion in large skillet cooking turkey in process. Drain if necessary. Add spaghetti sauce to skillet and bring to a simmer. Add rice and zucchini, cover, and simmer covered until rice is cooked and zucchini is tender.

Yield: 6 to 8 servings.

Variations:

The flavor may be varied by adding different spaghetti sauces. I like tomato basil or chunky style with mushrooms. If you purchase spaghetti sauce with meat, such as sausage and mushroom, you may prepare this dish without the ground turkey and onion.

To make this dish as a casserole, alter the recipe by browning the turkey and onion, mixing in the sauce, rice and zucchini then pouring the mixture into a greased casserole dish. Top the mixture with shredded mozzarella cheese, cover and bake in a 350 degree oven for 45 minutes.
