What can you do with all of that squash? When your spouse walks through the door with an armful of zucchini from the garden, do you panic? In some areas of the country, summer squash are very plentiful and they can grow very large. After running out of zucchini recipe ideas, people often start sneaking them into people's unlocked cars at church and other gatherings as a last resort!

When in doubt, fry

The most common way that people in the South prepare squash of any kind is by frying it. The zucchini is sliced in 1/4 thick rounds. It can be moistened in egg, milk, or even water. It is then dipped in seasoned flour or corn meal, and fried.

Zucchini bread is really dessert

Zucchini bread is a wonderful way to use your zucchini. It is quite delicious in a sweet, nutty way, and it is very addictive. And, by the way, it is dessert! Here is a zucchini bread recipe from the Queen of Southern

Skinny people steam it

...Or at least those who wish to be skinny often steam squash with onion. It is very low in calories when prepared this way, and it is very filling. It can be eaten with rice, for a great entree. Add some soy sauce and a little meat, and you have stir fry. You don't need a wok.

Zucchini squares are an elegant little finger food that you have probably enjoyed at cocktail parties. This is one of those favorite recipes that appear in every church cookbook. The seasoning or spices may vary, but the general ingredients are the same.

Ingredients:
3 cups of thinly-sliced zucchini
1 cup Baking Mix (like Bisquick)
4 eggs
1/2 cup oil
1/2 cup Parmesan cheese (in can)
1/2 cup chopped onion
2 Tablespoon Dried Parsley Flakes
Salt, pepper, and garlic powder to taste.

Directions:

Mix it all together, place in a greased pan, and bake at 350 degrees for 30 minutes.
If you would like it to be the consistency of quiche, add 1/2 cup milk to the batter. If you are cooking one large zucchini, you will need to double this recipe. One zucchini usually yields 7 cups. Serve with sprinkled Parmesan cheese.

    I am in knoxville and can't find large zucchini for relish. Any ideas? The farmers markets don't have any, except for the little stuff you can find in any produce section.
