Ingredients:
One medium to large zucchini squash
One 18 ounce bottle of Memphis style barbecue sauce
Salt and pepper
Microwavable dish with lid.
Water
Directions:
1. Cut off the ends of the squash..
2. Slice down the center vertically.
3. Remove seeds and pulp.
4. Slice into pieces that look like dill pickles spears. Remove any excess seeds that might be attached.
5. Place the pieces in a dish that has a tight-fighting lid.
6. Cover with the entire bottle of sauce and around 2 tablespoons of water.
7. Microwave in five minute increments, stirring in between. It may take three or four intervals to cook the zucchini.
8. Cover, and allow to stand for a few hours or overnight to absorb the sauce. Refrigerate when cool.
Good companion dishes
The Memphis style barbecued zucchini is great with corn bread. You can find a recipe here to make cornbread in a bread machine. It is also delicious with steamed cauliflower and cheese sauce.
