Hot Zucchini Squares
3 cups of grated unpeeled zucchini
1 cup of Bisquick mix
1/2 cup of finely chopped onion
1/2 cup of grated parmesan cheese
2 tablespoons of snipped parsley
1/4 teaspoon of salt
1/2 teaspoon of dried oregano leaves
Dash pepper
1 clove garlic, finely chopped
1/2 cup of vegetable oil
4 eggs, slightly beaten
Preheat oven to 350ºF. Grease oblong pan, 13x9x2. Mix all ingredients thoroughly. Pour into pan and spread evenly. Bake until golden brown, about 45 minutes (maybe 10 minutes longer). Cut into pieces 1 or 2 inches. Serve warm. Makes 4 dozen
Zucchini Quiche
3 cups of thin, unpared zucchini (about 4 sm.)
1 cup of Bisquick
1/2 cup of chopped onion
1/2 cup of Parmesan cheese
2 tablespoons of parsley
1/2 teaspoon of salt
1/2 teaspoon of oregano
A dash of pepper
1 clove garlic, chopped fine, or 1/2 tsp. garlic powder
1/2 cup of oil
4 eggs, slightly beaten
Mix all ingredients and put into greased 13x9 pan. Bake 350ºF. for 30-40 minutes
Zucchini Squares
1/8 teaspoon of garlic powder
1/2 teaspoon of salt
12 teaspoons of Italian seasonings
Dash of pepper
1/2 cup of grated Parmesan, Swiss or Monterey Jack cheese
4 cups of zucchini, unpared, sliced thin
2 tablespoons of snipped parsley
1/2 teaspoon of seasoned salt
1/2 cup of vegetable oil
4 eggs, slightly beaten
1/2 cup of finely chopped onion
1 cup of Bisquick mix
Grease 9 x 13 x 2 inch pan. Preheat oven to 350ºF. Mix ingredients and pour into greased pan. Bake until golden brown - 30-45 minutes. Cut into small pieces and serve as appetizers.
Zucchini Appetizers
3 cups of thinly sliced, unpeeled zucchini
1 cup of Bisquick
1/2 cup of imported Italian cheese
1/2 teaspoon of salt
1/2 teaspoon of marjoram
1/2 cup of finely chopped onion
2 tablespoons of parsley
1/2 teaspoon of seasoned salt
Dash pepper
1/2 cup of oil
1 clove garlic, finely chopped
4 eggs, slightly beaten
Put sliced zucchini in 13 x 9 inch Pyrex baking dish. Mix the rest of the ingredients together well with electric mixer. Pour over zucchini making sure it spreads evenly. Bake at 350ºF. for 35 minutes until golden brown.
Zucchini Squares
A great way to use up some of those zucchini from your garden. It tastes remarkably like pizza.

3 cups of zucchini; diced
1 cup of Bisquick
1 1/2 cup of Parmesan cheese; grated
1/2 teaspoon of Oregano; dried
1/2 cup of vegetable oil
4 Eggs ; beaten
1 cup of pepperoni ; diced
1/2 teaspoon of Salt
1/2 cup of onion ; chopped
2 tablespoons of Parsley ; dried
1 Clove garlic ; crushed or pressed
1/2 cup of Green pepper ; chopped/optional
= Instructions =-
Preheat oven to 350ºF. Combine everything in a large bowl but the eggs and the oil. Beat the eggs and add them to the oil in a small bowl. Stir to mix. Add the eggs and oil to the other ingredients and stir until blended. Spread evenly into a lightly greased 9" x 13" pan. Bake for 30 - 35 minutes at 350ºF Cut into squares and serve hot or cold. Makes 12 large squares. Tastes a lot like pizza.
Zucchini Supreme
6 cups of zucchini, cubed
1 large onion, chopped
1 package of Stove Top Stuffing Mix
1 Stick of butter or margarine
1 cup of sSour cream
1 can of cream of chicken soup
8 ounces of New York white sharp cheddar cheese
Boil zucchini and onion in salted water 10 minutes or until done. Drain and set aside. Toss stuffing crumbs and seasoning packet with melted butter or margarine. Put 1/2 in bottom of 9x13-inch baking pan. Mix together sour cream, cream of chicken soup and cheddar cheese. Add zucchini and mix well. Spoon over stuffing mixture in pan. Top with remaining stuffing mixture. Bake at 350ºF. for 25 minutes.
Zucchini Nut Bread
2 cups of sugar
3 eggs
1 cup of oil
3 teaspoons of vanilla
2 1/2 cups of flour
1 teaspoon of salt
1/4 teaspoon of baking powder
3 teaspoons of cinnamon
1 teaspoon of soda
2 cups of squash, shredded
1 cup of nuts, chopped
Combine sugar, egg, oil and vanilla. In separate bowl, combine flour, salt, baking powder, cinnamon and soda. Combine above wet and dry ingredients; then add shredded squash and nuts. Bake in well-greased loaf pans at 350ºF. for 50 to 60 minutes. Yields 2 loaves.
Butterscotch Zucchini Bread
3 eggs
1 cup oil
2 teaspoons vanilla
2 cups sugar
2 cups grated zucchini
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1/4 teaspoon baking powder
1/2 cup rolled oats
1 (3.4-ounce) package butterscotch pudding mix
1 cup nuts or 1 cup raisins or 1 cup dates
Lemon Frosting
2 cups confectioner's sugar
1/2 teaspoon grated lemon peel
2 tablespoons lemon juice
1/4 cup butter
Mix bread ingredients. Pour into 2 greased, floured, wax paper lined pans. Bake 1 hour at 350ºF degrees. Blend ingredients for lemon frosting and spread over tops of loaves after cooled.
Zucchini "Crab" Cakes
-= Ingredients =-
2 1/2 cups of zucchini, grated
1 cup of bread crumbs, fine
1 egg, beaten
2 tablespoons of margarine, melted
1 tablespoon of Old Bay seasoning
4 tablespoons of flour
1 small onion, chopped fine
Oil and margarine, for frying
I make it in the summer when squash are readily available. (Its not good unless the squash are fresh...frozen squash doesn't work.) Mix all ingredients together until well blended. Shape into patties. Fry in a mixture of half oil/half margarine until golden on each side. Turn only once. Drain on paper towels. Serve hot, with cocktail sauce on the side. These can be reheated in the microwave, but they lose their crispness.
